The TEOREMA ÀNEMOS convection combi oven series satisfies all the needs of high-end pastry and bakery kitchens. Ideal for small and medium-sized production, it lends itself to the cooking of any type of product from profiteroles to sponge cake, croissants, tarts, macaroons, small or medium-sized bread and multiple expressions of international gastronomy. Cooking takes place by means of a heated air flow sent into the chamber by means of two fans (TEOREMA ÀNEMOS 6) or three fans (TEOREMA ÀNEMOS 10). The homogeneity of the air flow, thanks also to the automatic fan rotation inverter, allows a constant distribution of heat, giving the product a regular cooking at every point. Convection allows you to reduce time and lower the cooking temperature, resulting in energy savings. Available in two configurations, touch screen and electromechanical. The touch screen features a core probe which allows you to set and control the temperature at the very core of the product and comes standard with self-cleaning function. The Teorema Anemos 6 Touch is distinguished by its 6 tray (600 x 400) capacity and touch screen fully functioned operation.
